Chef Mark started his professional career as a sports nutritional chef with the Denver Broncos — fueling elite athletes and learning what real nutrition means under pressure. The Broncos organization is where the discipline, precision, and performance-driven mindset was forged.
The World
From Denver, Chef Mark traveled abroad — learning and cooking in different parts of the world. Every kitchen, every culture, every ingredient added a new layer to his craft. Global flavors, local soul.
Coming Home
Chef Mark came back home and started revamping and building up other restaurants. Sharpening the blade. Perfecting the vision. Laying the groundwork for something bigger.
Shnax Is Born
On 4-20-2020, in the middle of Covid, Chef Mark opened Shnax on Oahu, Hawai'i — serving tapa-style farm-to-table dishes. While the world shut down, Shnax opened up. A holistic style of influenced local grown ingredients turned into tapa dishes that nourish mind and body. Now expanded to Seattle, Washington — the movement keeps growing.

Plantation-era Hawaiian slang
Back during the plantation days in Hawai'i, workers used the slang "shnacks" to describe the food they craved when they were drunk and high — indulgent, unfiltered, purely about satisfying the moment.
